Today I have my first recipe post for you all. Now, I apologise in advance for the quality of the photographs here (admittedly, they are not my best). I underestimated the ease of cooking and taking photos at the same time! This Chilli Prawn Spaghetti is something myself and Jonny created in the kitchen one evening just messing about with some ingredients we had. For those of you who don't like to eat seafood, substituting chicken for prawn would work just as well.
Ingredients
2x handfuls of spaghetti
10-12 raw, peeled prawns
1x tbsp of tomato purée
2x handfuls of plum tomatoes
3x garlic cloves
1x green (or red) chilli
chilli oil
olive oil
METHOD
1. Boil spaghetti in salted water on a medium heat.
2. Crush garlic, cut up the chilli and cut in half all of the plum tomatoes.
3. Heat a frying pan on high heat and add a splash of chilli oil.
4. Once hot, turn heat to medium and fry prawns until pink.
5. Add the garlic, chilli, tomatoes and purée to frying pan.
6. Stir together for 2 minutes until the tomatoes are soft.
7. Drain spaghetti, retaining a little bit of the water to keep the pasta loose.
8. Add contents of frying pan to spaghetti and season with salt and pepper if you wish.
Well, there you have it - a simple and quick recipe that I promise is delicious. The ingredients listed make enough for two portions. Let me know if you try this for yourself as I'd love to hear your thoughts :)
